Buffalo Chicken Dip
This ooey-gooey dip is a perfect starter accompaniment and is equally delicious served cold or warm. It comes together with only four ingredients, i.e., cream cheese, refrigerated blue cheese dressing, hot sauce, and shredded rotisserie chicken. To prepare this quick and easy dip, first slowly melt cream cheese over low heat. Add hot sauce as per your liking and blue cheese dressing to it. Cook the mixture until well combined, stirring often. Then stir in shredded cooked chicken and continue cooking for about two minutes. Transfer the mixture to a serving bowl. Serve the dip with crackers, pita chips, tortilla chips, nachos, and/or assorted veggies.
Cranberry Chicken Wings
Take a large bowl and stir together cranberry sauce, soup mix, and bottled dressing. Reserve ½ cup of the mixture. Now, add wings to the remaining marinade in the bowl and toss until evenly coated. Refrigerate the wings to let the marinade sit for at least 2 hours. Then take them out and heat the oven to 425oF. Prepare a rimmed baking sheet by lining it with foil and coating it with cooking spray. Spread the marinated chicken wings in a single layer on the sheet and bake until cooked through, for about 30-35 minutes. Brush the reserved marinade on them during the last 5 minutes. Meanwhile, prepare the dip by mixing lemon juice, sour cream, mayonnaise, and chopped parsley, and scallion.
Chicken Soufflé
For this dish, start by stirring together diced cooked chicken, mayonnaise, and chopped onion and celery in a large bowl. Coat a large baking dish with butter or cooking spray and place cubed white bread at the bottom, making a single layer. Pour the chicken mixture and cover it with another layer of bread cubes. Whisk together eggs and milk in another mixing bowl and pour over the bread-chicken mixture. Then cover the dish and chill for 2-3 hours or preferably overnight. Then uncover the casserole and place it in the oven, heated to 350oF. Bake for about 1 hour until the center gets firm. Now spread canned mushroom soup on top and sprinkle cheddar cheese over it. Bake until the cheese gets melted. The casserole will puff up and taste extra delicious.
